Cut a tender chicken into pieces, put it in a pot and leave it to cook with a generous portion of CADÍ butter. Chop some vegetables and leave to simmer for about 20 minutes. Add a little single cream with a glass of champagne and continue to simmer until the chicken is cooked. Remove the chicken pieces and reduce the sauce. Taste and add a portion of CADÍ butter to give the sauce the right consistency. Pour the sauce over the chicken pieces. Serve on a hot plate, making sure that the sauce does not boil.
Fact: Regular consumption of dairy products was enthusiastically recommended by the Russian Metchnikoff, from the Institut Pasteur in Paris, proponent of the theory of phagocytosis and Nobel Laureate in Medicine in 1908, for preventing intestinal self-intoxication which, according to his thesis, caused premature tissue aging and reduced longevity.
