INGREDIENTS:
• 100 g Urgèlia PDO cheese
• 100 g duck ham
• 100 g tender shoots of mixed salad leaves
• 8 wild asparagus shoots
• Old-fashioned mustard
• Olive oil
• Salt and pepper

Salad of green asparagus, duck ham and Cadí Urgèlia PDO cheese



PREPARATION:
• Sauté the asparagus in a frying pan with a squirt of olive oil and add a touch of salt and pepper.
• Put the tender shoots of salad leaves in a salad bowl.
• Cut the cheese into cubes and add them to the salad together with the duck ham and the sautéed asparagus.
• Prepare a vinaigrette with olive oil, a half teaspoon of mustard, salt and pepper.
• Dress the salad and it's ready to serve.
